Lobby cafes tend to do a roaring trade from office workers too lazy to venture out outside the building for their caffeine fix. The Paramount Coffee Project however relies on no such lazy tactics. Located in the lobby of Paramount House, the former Paramount Pictures building in Surry Hills, Paramount Coffee Project has become a standard venue for brunch lovers looking for a good feed.
We were in a waffle-ly mood this morning so decided to order the two waffle dishes. The sweet variation of the waffles came topped with rose ice-cream, almond slivers and toffee chips. Pieces of poached pear were scattered around and the dish was drizzled with caramel sauce and finished with fresh mint. I’m not the biggest fan of rose flavour in dishes so didn’t love this dish, but it tasted nice. The toffee chips added texture to contrast the soft and cold ice cream and the mildness of the poached pears balanced the intense sweetness of the caramel.
The savoury variation of the waffles came with buttermilk fried chicken that was covered in maple bacon gravy and topped with chilli pickled apple, charred radicchio and roasted hazelnuts. The chicken was a touch dry but the flavour was good. The chilli pickled apple was a nice way to add texture as well as a kick and the hazelnuts added a satisfying crunch.
Overall this was a good brunch experience. I feel we restricted our experience by ordering two waffles dishes so are keen to come back again to try more of their menu!
